While these are by no means calorie or fat free, they have three components that are far healthier than many others: Dried cranberries, molasses, and rolled oats.
Preheat your oven to 350 degrees and gather the following ingredients:
1 1/4 c. Old Fashioned Oats
3/4 c. Flour
3/4 c. Sugar
2 tbsp. Molasses
1 Stick of unsalted butter
1 tsp. Baking Powder
1 tsp. Vanilla
1 tsp. Cinnamon
1/2 tsp. Salt
1 Egg
1 1/4 c. Dried Cranberries
In a medium size bowl, mix the flour, cinnamon, salt, oats, and baking powder. Set aside. In another bowl, beat the butter, sugar, molasses, and vanilla until creamy. Finally, add the egg.
Add the cranberries and roll into balls. Approximately 1 Tbsp. in size.
Bake at 350 for 15 minutes. Yields about 1 1/2 dozen.
These are very filling, but you may want to double the recipe if you are accustomed to making more than a dozen or so.
My favorite dried cranberries are the ones I buy at Trader Joes. They are almost double the size of
Craisins and are cheaper, too!
